Air France continues to focus on a luxurious flight experience and presents a new menu for the company’s luxury business class - La Première
Starting from December, passengers will enjoy an extraordinary culinary collaboration between chef Emmanuel Renaut, a three-star Michelin winner and titled "Best Worker in France", and renowned pastry chef Claire Heitzler.
Menu Inspired by Savoyard Cuisine
Emmanuel Renaut, known for his connection to nature and use of seasonal ingredients, designed all the appetizers and main courses in the new menu. Among the dishes: Beaufort cheese souffle, mushroom cream with truffles, and foie gras accompanied by salsify root salad, cranberries, and onion chutney. Additionally, the menu features eight main courses blending elements of Savoyard cuisine, such as polenta with forest mushrooms, spinach, and mountain cheese or shellfish cannelloni in a lemon cream sauce with root vegetables.
Claire Heitzler's Desserts
For the first time, the dessert menu of La Première is entrusted to Claire Heitzler, who was chosen as pastry chef of the year in 2013 by the Gault & Millau guide.
Heitzler crafted a selection of unique desserts blending French seasonal flavors. Among the desserts: "Triple Chocolate Cloud" with a crunchy base and dark chocolate mousse, and "Castanier" combining Ardèche chestnuts with Corsican clementines.
La Première is available this winter on flights from Paris-Charles de Gaulle to leading destinations, including Abidjan, Dubai, Los Angeles, Miami, New York, San Francisco, Washington, Sao Paulo, Singapore, and Tokyo.
