For those who want, you can always add rice / noodles and, of course, croutons and any type of protein, from slices of meat and chicken to fish and tofu.

Quick Asian Soup
Basic recipe to which you can add many vegetables such as broccoli and beans, chopped chicken, roasted tofu, and more.
Ingredients:
- 1 tablespoon sesame oil
- 1 small onion, finely chopped
- 2 cloves garlic, finely chopped
- 1 piece (about 2 cm) fresh ginger, grated
- 4 cups vegetable or chicken broth
- 1 cup sliced mushrooms
- 1 cup julienned carrot
- 1/2 cup bean sprouts
- 1/4 cup soy sauce
- 1/4 sliced chili - for spice lovers
- 1/2 teaspoon ground black pepper
- Rice noodles or ramen noodles (optional)
- Handful of chopped dill
- Chopped green onion for garnish

Instructions:
- Heat the sesame oil in a medium pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the garlic and ginger and sauté for another minute, until slightly golden.
- Add the vegetable or chicken broth, mushrooms, carrot, and sprouts. Bring to a boil, reduce the heat, and simmer for about 10 minutes, until the vegetables are tender.
- Add the soy sauce and black pepper. Mix well.
- If desired, add rice noodles or ramen and cook according to the manufacturer's instructions.
- Add the dill for another minute, serve hot, garnished with chopped green onion and chili.
- Upgrade suggestions: Squeeze lemon or lime juice on top, add pieces of chicken or tofu

Tomato Soup

Ingredients:
- 1 kg ripe tomatoes
- 1 large onion, chopped
- 2 cloves crushed garlic
- 1 tablespoon tomato paste
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups water or vegetable broth
- 2 tablespoons olive oil
- Fresh basil for garnish (optional)

Instructions:
- Heat the olive oil in a large pot.
- Add the chopped onion and sauté until golden.
- Add the crushed garlic and sauté for another minute.
- Add the chopped tomatoes, tomato paste, sugar, salt, and black pepper.
- Mix well and cook for about 10 minutes, stirring occasionally.
- Add the water or vegetable stock and bring to a boil.
- Reduce the heat, cover the pot, and simmer for about 30 more minutes.
- Blend the soup with an immersion blender or food processor until smooth.
- Serve hot, garnished with fresh basil (optional).

Red Lentil Soup:

Ingredients:
- 1 cup washed red lentils
- 1 large onion, chopped
- 2 cloves crushed garlic
- 1 carrot, peeled and diced
- 1 teaspoon cumin
- 1/2 teaspoon turmeric
- 1/4 teaspoon curry
- 4 cups water or vegetable broth
- 2 tablespoons olive oil
- Salt and black pepper to taste
- Juice from one lemon (optional)

- Heat the olive oil in a large pot.
- Add the chopped onion and sauté until golden.
- Add the crushed garlic, carrot, cumin, turmeric, and curry.
- Mix well and cook for about 5 more minutes.
- Add the lentils, water or vegetable stock, salt, and black pepper.
- Bring to a boil, reduce the heat, cover the pot, and cook for about 20 minutes, until the lentils are soft.
- Blend the soup with an immersion blender or food processor until smooth.
- Add lemon juice to taste (optional).
