Signia Hilton Naples Grande Beach Resort in Florida will introduce five new dining concepts when it reopens in January 2027 following a major renovation. The new venues will range from an Italian trattoria and Mediterranean-inspired bar to a beachfront eatery and poolside restaurant.

The 474-room resort, located on Florida's Gulf Coast in Naples, is preparing a new food and beverage program as part of a property-wide transformation covering guest accommodations, dining areas, wellness facilities and public spaces.

The five concepts will include Spoonbill, Solfina Bar and Terrace, Vicolo Social Club and Trattoria, Cocoplum Pool Bar and Flipside Beach Bar. Each will offer a different dining experience, with options for hotel guests and visitors looking to spend time along the coast.

Five New Dining Concepts

Spoonbill will serve as the resort's lobby café and marketplace, operating from morning through evening. Its menu will include freshly prepared sandwiches, salads, juices and house-made pastries, alongside coffee, ice cream and affogatos. The venue will also offer a selection of retail products.

Solfina Bar and Terrace will replace the existing lobby bar with an indoor-outdoor setting inspired by Mediterranean coastal destinations. Its menu will feature Neapolitan pizzas, crudo and sharing plates, accompanied by classic cocktails, including Negronis and Spritzes.

Vicolo Social Club and Trattoria will introduce a modern Italian dining concept, with house-made pasta, a dedicated steak menu and tableside service. The restaurant will also feature a bar serving martinis and other cocktails, with music and evening entertainment contributing to its social atmosphere.

Two additional venues will focus on outdoor dining. Cocoplum Pool Bar will serve burgers, fresh salads and other casual dishes, alongside frozen cocktails, wine and champagne. An open-concept kitchen and bar will overlook the pool area.

Meanwhile, Flipside Beach Bar will bring a retro-inspired atmosphere to the beachfront, serving smash burgers, fries, sandwiches and other casual favorites. Guests will be able to enjoy their food and drinks at the venue or take them to nearby Clam Pass Beach.

Chef Asif Syed to Lead Culinary Program

The new dining lineup will be overseen by Chef Asif Syed, who was recently appointed Director of Culinary at the resort. The Florida-based chef and restaurateur will lead the property's food and beverage operations as part of its broader transformation.

Gary Sims, vice president and managing director of Signia Hilton Naples Grande Beach Resort, said the five concepts were designed to create different opportunities for guests and local residents to gather, dine and socialize.

The renovation covers all 474 guest accommodations, as well as the resort's restaurants, wellness facilities and communal spaces.

Set among the mangrove forests of Florida's Paradise Coast, the property offers access to three miles of white-sand beach and is undergoing a comprehensive update ahead of its planned January 2027 reopening.
