The partnership, which began in two years ago, is expected to bring a fresh selection of refined pastries designed specifically for the in-flight experience. Named World’s Best Pastry Chef in 2023, Métayer has created desserts that balance flavor and texture while adapting to the unique conditions of high-altitude dining.

Highlights include two new creations joining the onboard menu for the first time. The Raspberry coconut delight combines coconut mousse, raspberry confit and white chocolate for a light yet indulgent finish.

The Lemon verbena escape offers a citrus-forward option with a refreshing profile, designed to provide a bright and elegant end to the meal.

“I designed these desserts to be true travel companions. I’ve created rich yet light pastries to take travelers on a sensory journey, whilst evoking the charm of faraway destinations,” said Nina Métayer.

The dessert offering is part of a broader Business Class dining experience crafted by Régis Marcon, a triple-Michelin-starred chef and Bocuse d’Or winner. His menus draw inspiration from France’s Auvergne-Rhône-Alpes region and focus on seasonal ingredients and simple, refined flavors.

All dishes are prepared in collaboration with Servair, using fresh, locally sourced ingredients that change throughout the year. Air France notes that meat, dairy and eggs are of French origin, while fish is sourced from sustainable or French fisheries. Vegetarian options are also available across all cabins.

To reduce food waste and improve service, passengers traveling in Business Class can pre-select their main course up to 24 hours before departure

With this latest update, Air France continues to place a strong emphasis on gastronomy as a key part of the travel experience, offering passengers a taste of French culinary expertise even at cruising altitude.
