A new boutique hotel has opened in Niagara-on-the-Lake, bringing together wine, food and wellness in a property designed around the character of Canada's Niagara wine country.
Oak and Natural Stone for a Contemporary Look
The Clayfield, part of Hyatt's Unbound Collection, welcomed its first guests at the start of autumn. The hotel takes its name from the clay-rich landscape around Niagara and has been designed to reflect the area's vineyards, escarpment and creative community.
The project brings together two local families, the Feldbergs and the Hawleys. David Feldberg, founder of Stratus Vineyards, wanted to create a hotel shaped by the same connection between landscape, design and hospitality that defines his winery.

The two met in 2019 and eventually combined their ideas to create the hotel.
Montreal-based Sid Lee Architecture designed The Clayfield around sculptural forms and curved lines inspired by Niagara's escarpment. Vertical timber details reference vineyard rows, while large windows look toward the surrounding landscape.
Inside, the hotel uses oak, natural stone, woven textiles and other warm materials rather than relying on traditional wine-country décor. The result is intended to connect the property with its setting while giving it a contemporary feel.

Food is a major part of the experience. The hotel's main restaurant, Terrain, is operated by The Ascari Group and led by Executive Chef Joel LaBute. The restaurant focuses on seasonal produce from Niagara, local growers and producers, and wines from regional wineries and small producers.
Terrain includes an 80-seat dining room, a 25-seat lobby bar and a Chef's Table. The hotel also has The Rooftop at The Clayfield, described as Niagara-on-the-Lake's first rooftop patio, with cocktails and small plates overlooking the vineyards.
The full-service spa follows the property's wine-and-clay theme, offering treatments that include clay-based body rituals and vinotherapy.
The hotel also includes more than 5,400 square feet of meeting and event space, including a ballroom equipped for meetings, private dinners and celebrations.
The Clayfield is connected to the wider Clayfield Commons development, which includes a grocery store, medical center, bank, restaurants, retailers, makers and other local businesses surrounding a landscaped public space and seasonal farmers' market.
The hotel becomes the latest addition to Hyatt's Unbound Collection, which focuses on independent properties with distinct local identities. Reservations are now open, with special offers available for stays through April 2027.
