American airline United Airlines is expanding its culinary collaboration with Chef's Table, the brand behind the award-winning Netflix docuseries, and is launching 30 new dishes for United Polaris International Business Class passengers.

The new menu will launch on flights on November 1 and will be available until the end of December 2026, as part of a plan to refresh the dishes seasonally in 2027.

The new menu features dishes from 11 leading chefs from 10 cities, including Los Angeles, Chicago, New York, San Francisco, London, Tokyo and Sao Paulo. The dishes combine seasonal ingredients with contemporary interpretations of local cuisines, aiming to connect the in-flight experience with the destinations passengers are visiting.

Among the new dishes is a meat lasagna with tomato sauce and Tagliatelle cheese, created by American chef Nancy Silverton of Osteria Mozza in Los Angeles. Silverton, who won the James Beard Foundation's Outstanding Chef Award in 2014, is also known for her contributions to the promotion of burrata cheese in the United States.

In San Francisco, grilled lamb chops will be served with a carrot-based barbecue sauce, pickled carrots and chicory leaves, the creation of chef David Barzelli of the two-Michelin-starred Lazy Bear restaurant.

In London, the menu will feature roasted pumpkin with rosemary, stracciatella cheese, pickled apples, spiced pumpkin seeds and hazelnuts, a dish by chef Tomos Pari, who is behind restaurants Mountain and Brat. Alongside these dishes will be fish, chicken, duck, seafood and salads that combine different cooking techniques and influences from cuisines around the world.

The new dishes are inspired by United’s seven hub cities in the United States, along with key international hubs in London, Sao Paulo and Tokyo. The menu includes chermoula-glazed chicken with cumin-spiced carrots, char siu pork with celery root and potato puree, and dishes inspired by Japanese, Brazilian and Ethiopian cuisine.

International Business Class passengers can pre-order meals on the airline’s website or app, starting five days before their flight and up to 24 hours before takeoff. The pre-order option is designed to allow passengers to browse the menu and select their preferred meal before boarding the plane.

The new move comes after the collaboration's first round of dishes launched on August 1. According to United, more than 60,000 passengers have already enjoyed the new dishes, with satisfaction scores nearly 20 points higher than other pre-ordered meals.

The company notes that improving the food and beverage experience is part of a broader investment in passenger service. During 2025, United said it invested more than $150 million in upgrading the dining experience, both on flights and in the company's lounges.

Alongside the dishes served on board, passengers will be able to watch dedicated Chef's Table content on their in-seat screens, showcasing the chefs and the stories, ingredients and inspirations behind the dishes. The program also includes selected episodes from the Chef's Table: Talks podcast, hosted by series creator David Gelb.

The new menu will be served on flights departing from the relevant cities in the afternoon or evening, and will be available to United Polaris passengers until December 31, before transitioning to the next round of menus.
