Nonstop Growth: Hyatt Plans New Luxury Hotels Across Mexico and the Americas

Hyatt is expanding its luxury portfolio across the Americas with new Park Hyatt, Alila, Unbound Collection and Grand Hyatt properties

Hyatt Hotels Corporation is entering the final quarter of 2026 with a series of luxury hotel openings and brand expansions across the Americas, with Mexico at the center of its latest growth plans.

The company is expanding Park Hyatt in Mexico while adding new properties to The Unbound Collection by Hyatt and Alila. Grand Hyatt is also preparing to open three new resorts in Latin America and the Caribbean before the end of the year.

Mexico is a particular focus for Park Hyatt. The brand entered the country in December 2025 with Park Hyatt Cabo del Sol in Baja California Sur. Two more properties are planned, giving the brand a presence on both the Pacific and Caribbean coasts as well as in Mexico City.

Park Hyatt Riviera Maya is expected to open by the end of 2026 and will become the first all-inclusive property under the Park Hyatt brand. The resort will be located along Mexico’s Caribbean coastline and is designed around personalized service, pre-arrival planning and à la carte dining.

Park Hyatt Mexico City Polanco is scheduled to welcome guests in spring 2027. The 155-room-and-suite hotel will be located on Campos Elíseos in Polanco, overlooking Chapultepec Park. Mexican art, design and cuisine will feature prominently across the property.

Hyatt is also expanding The Unbound Collection by Hyatt, which focuses on hotels with individual identities and distinct design or historical characteristics.

The Clayfield in Niagara-on-the-Lake, Ontario, has joined the collection, drawing inspiration from the region’s vineyards and clay-rich soil. In November, adults-only all-inclusive resort Impression Isla Mujeres is scheduled to become part of the collection, bringing its suites, butler service and personalized hospitality to the brand.

Hyatt said the collection will also introduce a new experiences initiative this year, with selected hotels offering locally rooted activities involving food, wine, culture, artists and other aspects of their destinations.

The Alila brand is meanwhile continuing its expansion in the Americas. Alila Mayakoba joined the portfolio in February 2026, adding a 182-room resort across 60 acres of beach, lagoon and jungle on Mexico’s Riviera Maya.

The resort includes six dining venues and Alila Spa, with architecture and design incorporating local materials and collaborations with regional artisans.

From October 1, Alila Mayakoba and three other Alila properties in California and Napa Valley will join Erewhon’s Member Lifestyle Collective, connecting the hotel brand with the retailer’s membership community.

Grand Hyatt is also preparing for a busy final quarter. Grand Hyatt Grand Cayman, Grand Hyatt Cancun and Grand Hyatt Los Cabos are all scheduled to open in the fourth quarter of 2026.

The three resorts will expand Grand Hyatt’s presence across the Caribbean and Mexico, with the Cancún and Los Cabos properties also bringing all-inclusive offerings to the brand’s Americas portfolio.

For Hyatt, the latest additions represent a broad expansion across several luxury brands, from urban hotels in Mexico City to beachfront resorts, wine-country retreats and all-inclusive properties.
