Carnival Cruise Line has revealed an ambitious expansion of its dining and beverage offerings, introducing a series of new restaurants, bars, and menu enhancements that will debut on upcoming ships and gradually roll out across the fleet.
The cruise line announced the initiative, called "The Next Course," during a special event in New Orleans hosted by Chief Culinary Officer Emeril Lagasse. The program is designed to refresh the onboard dining experience for the more than six million guests Carnival serves annually.

Photo: Carnival Cruise Line Among the headline additions is Emeril's Coastal Seafood, a new restaurant inspired by chef Emeril Lagasse's coastal cooking style, featuring seafood-focused dishes.
Photo: Carnival Cruise Line Guests aboard future ships will also find Uku Lei Lei, serving Hawaiian specialties and Asian-inspired cuisine, and Fetaccine, a Mediterranean concept blending Italian classics with Greek favorites.
Photo: Carnival Cruise Line A fourth venue, Le Bistro Musicale, will offer French cuisine in a Paris-inspired setting accompanied by live music. The restaurant will be exclusive to the upcoming Carnival Festivale, scheduled to enter service in 2027.

These include The Spark, a lounge featuring live performances and music-inspired cocktails; Mix, an interactive venue where guests can customize their own drinks; and Festival Grounds Coffee & Bar, offering specialty coffees alongside cocktails.
Beyond the new venues, Carnival is refreshing dining experiences across its fleet. Guests can expect updated breakfast, brunch, and dinner menus in main dining rooms, expanded offerings at the Lido Marketplace, and rotating specials at BlueIguana Cantina.
Photo: Carnival Cruise Line Additional enhancements include Bagels @ Sea, featuring freshly baked bagels with various toppings, a revamped Chef's Table experience with regionally inspired multi-course meals, and new pop-up concepts such as breakfast bars, ice cream stations, and milkshake bars.
Carnival is also introducing more convenience-focused features, including expanded mobile ordering for coffee and grab-and-go items, as well as a new Express Dining option aimed at reducing wait times in main dining rooms.
The first elements of The Next Course will debut aboard Carnival Festivale in 2027, followed by additional concepts on Carnival Tropicale when it launches in 2028.
